CELLER LOLI CASADO
75 years ago one man had a dream: to cultivate and bring out the best in a privileged area for grape growing. Years later, his son, Luis, driven by that same passion and using those same vines, founded the winery from which two classic wines of the Rioja Alavesa: Covara and Jaun de Alzate.
There are some qualities which only time can provide. There is the repose, the waiting. Months, Years..The vins offer all the wisdom accumulated in their roots. However, in Bodegas Loli Casado we look to the future too, to times ahead. Because there are other goals which only new technology and wine –marking methods can help to achieve. Our ancient cellars are now linked to new and advanced methods of production. This is why Bodegas Loli Casado is involved in a training and research project for the improvement of quality of the wines. A new stiyle. A new spirit. A new phase. A new phase. The winery building is of recent construction. The bunches of grapes are destemmed slowly, without crushing, and the grapes go directly into the bottom of the vats, in a atmosphere saturated with carbon dioxide to avoid any contact with oxygen during the filling process. The vats are cylindrical, but have a conical top; this means we can break up the solid cap using the DELESTAGE method, as well as the traditional system of punching through the cap.The wines are oak aged in two stage. The first stage is carried out in selected fine graines new oak casks, while the second stage occurs in slightly older casks, on average 6 years old. This way both the fruit and oak are well integrated, but there is a predominance of fruit.
