Monastrell This sweet wine is at its best, with great concentration, persistence and balance. We let the oldest of our estate vineyards retain their fruit well into the fall. The overripe grapes reach reach incredible levels of concentration. When climatological everything works perfectly, 5 or 6 years every decade, we can develop our sweet wine.

Pascual Olivares Fernandez began preparing small quantities of wine in 1930 to provide our region. This is the origin of Bodegas Olivares. Our love for this land of Jumilla demanding feeds our passion for wine and its production. Passion that moves us to create unique wines. Wines that faithfully represent the unique terroir of our region. The transformation of our precious Monastrell in wine is a natural process. After careful vintage hand, we allow fermentations occur slowly using only indigenous yeasts; a process that preserves the nature of the grape without masking.
